Soupe de potiron au ras-el-hanout
Il y a quelques jours, j'ai ramené du potager un potiron tellement énorme qu'il pourrait nourir tout un régiment. Après avoir fait un velouté de potiron au romarin, en avoir passé un gros morceau dans un plat de lentilles, en avoir congelé une partie (dans mon minuscule congélateur), je suis repartie dans les soupes en tout genre. Celle-ci faisait l'objet d'un tout petit encart dans le dernier Cuisines & Vins de France. L'utilisation du ras-el-hanout (qui aurait été littéralement traduit par "la tête de la boutique" dans un épisode de Masterchef ... ce qui ne veut rien dire... petite dédicace au passage à HATC) m'a tout de suite plu et je n'ai pas été déçue du résultat.
Il vous faut :
- 1 kg de potiron épluché
- 1 oignon
- 2 tablettes de bouillon de volaille
- 2 CS d'huile d'olive
- 1 CC bombée de ras-el-hanout
Eplucher et émincer l'oignon. Couper le potiron en morceaux. Disposer l'oignon et le potiron dans une cocotte et ajouter l'huile d'olive. Faire revenir à feu moyen pendant 3 minutes puis ajouter les tablettes de bouillon et 1 litre d'eau.
Laisser cuire pendant 30 minutes (le potiron doit devenir très tendre).
Ajouter le ras-el-hanout, laisser mijoter encore 5 minutes puis mixer. Servir bien chaud.
Verdict : très bon et bien parfumée. N'hésitez pas à doser le ras-el-hanout selon vos goûts.

J'ai fait un velouté de potiron hier soir, et je voulais changer des épices indiennes que je mets d'habitude, et panne sèche d'idées... du coup c'était du simplissime, oignons et crème d'avoine...

Très bien ça le ras el hanout avec le potiron! ce mélange d'épices s'accorde tellement bien avec les courges, les carottes, les pomme de terres et j'en passe! Mais la cannelle s'accorde aussi magnifiquement avec les courges en tout genre.

J'aime bien cette facon de faire, en faisant revenir les legumes avant d'ajouter le bouillon. J'ai une recette tres semblable epicee de graines de coriandre et de cumin que tu fais torrefier avant, c'etait delicieux aussi.
